Fideo Con Pollo (Mexican Chicken with Noodles)

Ingredients:**

  • 4 tbsp cooking oil, divided
  • 6 chicken drumsticks, thawed, skin on
  • Salt and black pepper, to season chicken
  • 1 (7 oz) bag dry fideo noodles (or thin vermicelli)
  • 6 cups warm water
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 (8 oz) can tomato sauce
  • 1 large tomato, chopped
  • 1 chicken bouillon cube (or 1 tbsp bouillon powder)
  • ½ tsp cumin powder
  • ½ tsp smoked paprika
  • ½ tsp chili powder (optional, for a mild kick)
  • 1 tsp dried oregano
  • ¼ cup fresh cilantro, chopped (plus extra for garnish)
  • Juice of ½ lime (optional, for brightness)

Instructions:**

Step 1: Prepare the Chicken

  1. Pat the chicken drumsticks dry with paper towels and season them generously with salt and pepper.
  2. In a large pot or deep skillet, heat 2 tablespoons of oil over medium-high heat.
  3. Add the chicken drumsticks and sear them on all sides until golden brown — about 4–5 minutes per side.
  4. Once browned, remove the chicken and set aside on a plate (they don’t have to be fully cooked yet).

Step 2: Toast the Fideo

  1. In the same pot, add the remaining 2 tablespoons of oil.
  2. Add the fideo noodles and toast them, stirring constantly, until they turn a deep golden brown. Be careful not to burn them — this step adds incredible flavor!

Step 3: Add Aromatics

  1. Add the onion and garlic to the toasted noodles. Sauté for about 1–2 minutes until fragrant.
  2. Stir in the chopped tomato and tomato sauce. Cook for another 2–3 minutes, letting everything blend together.

Step 4: Build the Broth

  1. Pour in 6 cups of warm water.
  2. Add the chicken bouillon, cumin, paprika, chili powder, and oregano.
  3. Stir well to combine, making sure no noodles are sticking to the bottom.

Step 5: Simmer the Chicken

  1. Return the browned chicken drumsticks to the pot.
  2. Bring the mixture to a gentle boil, then reduce the heat to medium-low.
  3. Cover and simmer for 25–30 minutes, or until the chicken is fully cooked and the noodles are tender.
  4. Stir occasionally to prevent sticking and ensure even cooking.

Step 6: Finish and Serve

  1. Once the chicken is tender and the sauce has thickened to a stew-like consistency, stir in fresh cilantro and a squeeze of lime juice.
  2. Taste and adjust seasoning — add more salt or bouillon if needed.
  3. Serve hot, topped with extra cilantro or a sprinkle of cheese if desired.
