- 6 chicken drumsticks, thawed, skin on
- Salt and black pepper, to season chicken
- 1 (7 oz) bag dry fideo noodles (or thin vermicelli)
- 6 cups warm water
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 (8 oz) can tomato sauce
- 1 large tomato, chopped
- 1 chicken bouillon cube (or 1 tbsp bouillon powder)
- ½ tsp cumin powder
- ½ tsp smoked paprika
- ½ tsp chili powder (optional, for a mild kick)
- 1 tsp dried oregano
- ¼ cup fresh cilantro, chopped (plus extra for garnish)
- Juice of ½ lime (optional, for brightness)
Instructions:**
Step 1: Prepare the Chicken
- Pat the chicken drumsticks dry with paper towels and season them generously with salt and pepper.
- In a large pot or deep skillet, heat 2 tablespoons of oil over medium-high heat.
- Add the chicken drumsticks and sear them on all sides until golden brown — about 4–5 minutes per side.
- Once browned, remove the chicken and set aside on a plate (they don’t have to be fully cooked yet).
