Cheesy Sausage Breakfast Casserole

Ingredients:

  • 1 lb (450 g) breakfast sausage (pork or turkey), crumbled
  • 6 large eggs
  • 2 cups whole milk (or half-and-half for creamier texture)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 4 cups frozen hash browns (thawed) or cubed bread (day-old works best)
  • 2 cups shredded cheddar cheese (or a mix of cheddar & mozzarella)
  • ½ cup shredded parmesan cheese (optional, for extra flavor)
  • ½ cup chopped onion (optional)
  • ½ cup chopped bell peppers (optional, for color and crunch)
  • Cooking spray or butter (for greasing the dish)

Instructions:

  1. Preheat Oven – Set to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook Sausage – In a skillet over medium heat, cook the sausage until browned and crumbly. Drain excess grease. If using onions or peppers, sauté them with the sausage.
  3. Layer Ingredients – Spread thawed hash browns or bread cubes evenly into the greased baking dish. Top with sausage mixture, then sprinkle shredded cheese on top.
  4. Whisk Eggs – In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until smooth.
  5. Pour & Settle – Pour egg mixture evenly over the casserole layers. Use a spatula to gently press down so everything is coated.
  6. Bake – Place in the oven and bake uncovered for 40–45 minutes, or until the casserole is set in the center and golden on top.
  7. Rest & Serve – Let it cool for 5–10 minutes before slicing. This helps the casserole hold its shape.
