Mango Passionfruit Dream Cake Recipe: A Tropical Indulgence
Ingredients:
2 cups all-purpose flour
– 1 ½ teaspoons baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 cup granulated sugar
– ½ cup unsalted butter, softened
– 2 large eggs
– 1 teaspoon vanilla extract
– ¾ cup mango puree (fresh or canned)
– ½ cup passionfruit juice
– 1 cup diced fresh mango
Passionfruit Cream Topping:
– 1 cup heavy cream
– 2 tablespoons powdered sugar
– 2 tablespoons passionfruit juice
– ½ teaspoon vanilla extract

Directions:
1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and set it aside.
2. Mix dry ingredients. In a bowl, combine the flour, baking powder, baking soda, and salt.
3. Cream the butter and sugar. In a separate bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, then the vanilla extract, mixing well.
4. Combine wet and dry ingredients. Gradually add the flour mixture to the butter mixture, alternating with the mango puree and passionfruit juice, mixing until just combined.
5. Fold in the diced mango. Gently stir the mango pieces into the batter, then pour the batter into the prepared cake pan, spreading it evenly.
6. Bake. Place the cake in the oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
7. Make the passionfruit cream topping. In a bowl, whip the heavy cream with powdered sugar, passionfruit juice, and vanilla extract until soft peaks form. Spread over the cooled cake or serve on the side.
