1-2 bird’s eye chilies, finely sliced (adjust to spice preference) (about 5-10g)
2 tablespoons fresh lime juice (about 30ml)
1 tablespoon soy sauce or tamari (about 15ml)
1 teaspoon maple syrup or brown sugar (about 5ml)
1/2 teaspoon grated ginger (about 2.5g)
Optional: Crushed roasted peanuts for garnish
1. In a medium mixing bowl, combine the diced mango, very thinly sliced red onion, chopped fresh cilantro, chopped fresh mint, and sliced bird’s eye chilies (if using).
2. In a separate small bowl, whisk together the fresh lime juice, soy sauce or tamari, maple syrup or brown sugar, and grated ginger until well combined.
3. Pour the dressing over the mango salad ingredients.
