Ingredients
- 8 oz (225 g) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 tsp salt
- 1 1/2 tsp pure vanilla extract
- 1 large egg yolk
- 2 cups all-purpose flour
Instructions
- Prepare the dough: In a large mixing bowl, beat the softened butter and sugar together until light, fluffy, and creamy — about 2–3 minutes using a hand mixer. Add the salt, vanilla extract, and egg yolk, then beat again until smooth.
- Add the flour: Gradually add the flour to the butter mixture. Mix on low speed until a soft dough forms. Do not overmix.
- Shape the cookies: Roll the dough into a log, wrap it in plastic wrap, and refrigerate for at least 1 hour until firm. You can also pipe or shape them with a cookie press for fancy designs.
- Preheat the oven: Set the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice and bake: Slice the chilled dough into 1/4-inch rounds (or arrange piped cookies on the tray). Bake for 10–12 minutes, or until the edges turn light golden.
- Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
