(Makes about 24 large muffins)
- 6 cups all-purpose flour
- 4 tablespoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 3 cups granulated sugar
- 2 cups unsalted butter (softened)
- 8 large eggs (room temperature)
- 2 tablespoons vanilla extract
- 3 cups whole milk (or buttermilk for extra softness)
- Optional: zest of 1 lemon or orange for aroma
Instructions**
- Preheat Oven
Set oven to 180°C (350°F). Line muffin tins with paper cups. - Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. - Cream Butter and Sugar
In another large bowl, beat butter and sugar together until pale and fluffy (about 3–5 minutes). - Add Eggs and Vanilla
Beat in eggs one at a time, then mix in vanilla extract (and citrus zest if using). - Combine Wet and Dry Mixtures
Alternately add dry ingredients and milk into the butter mixture, beginning and ending with dry. Mix until smooth, but don’t overbeat. - Fill Muffin Cups
Spoon the batter into muffin liners, filling about ¾ full to allow them to rise nicely. - Bake
Bake for 20–25 minutes or until tops are golden and a toothpick comes out clean. - Cool
Allow muffins to cool on a wire rack before serving.
Tips**
- For extra moisture, add ½ cup of plain yogurt or sour cream to the batter.
- To make them extra golden, sprinkle a little coarse sugar on top before baking.
- You can mix in chocolate chips, berries, or nuts for variety.
