Stuffed Buns (Savory, Soft, and Fluffy)

Ingredients:

For the Dough:

  • 4 cups all-purpose flour
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 cup warm milk (about 110°F / 43°C)
  • 2 tbsp sugar
  • 1 tsp salt
  • ¼ cup melted butter or oil
  • 1 large egg

For the Filling (savory meat or vegetable):

  • 2 tbsp oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb (450 g) ground beef, chicken, or turkey (or vegetables like mushrooms, potatoes, or cabbage)
  • 1 small carrot, grated (optional)
  • 1 bell pepper, chopped (optional)
  • 2 tbsp soy sauce or tomato paste
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (to taste)
  • ¼ tsp cumin (optional)
  • 2 tbsp chopped parsley or coriander
  • ½ cup shredded cheese (optional, for cheesy filling)

For Brushing:

  • 1 egg yolk (mixed with 1 tbsp milk)
  • Sesame seeds or nigella seeds (optional)

Instructions:

1. Prepare the Dough:

  1. In a small bowl, mix warm milk, sugar, and yeast. Let sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt.
  3. Add yeast mixture, egg, and melted butter.
  4. Mix until dough forms, then knead for 8–10 minutes until soft and elastic.
  5. Place in a greased bowl, cover with a damp towel, and let rise for 1 hour or until doubled in size.

2. Prepare the Filling:

  1. Heat oil in a skillet over medium heat.
  2. Add onions and garlic; sauté until golden.
  3. Add ground meat and cook until browned.
  4. Stir in vegetables, soy sauce (or tomato paste), and spices.
  5. Cook until the mixture is thick and dry — no excess liquid.
  6. Stir in herbs and cheese (if using). Cool before filling.

3. Shape the Buns:

  1. Punch down the risen dough and divide into 12 equal pieces.
  2. Roll each piece into a small circle (about 4 inches wide).
  3. Place 1–2 tbsp filling in the center.
  4. Pinch edges together to seal tightly and shape into smooth balls.
  5. Place seam-side down on a parchment-lined baking tray.
  6. Cover and let rise again for 30 minutes.

4. Bake:

  1. Preheat oven to 375°F (190°C).
  2. Brush buns with egg yolk and sprinkle with sesame or nigella seeds.
  3. Bake for 18–22 minutes, until golden brown.
  4. Cool slightly before serving.

Tips:

  • For sweet stuffed buns, fill with Nutella, jam, or sweetened cream cheese.
  • You can air fry at 350°F (175°C) for about 12–15 minutes.
  • Buns freeze well — reheat in the oven before serving.

Serving Suggestion:
Serve warm with a side of ketchup, garlic sauce, or yogurt dip. Perfect for snacks, picnics, or breakfast.
