- 2 ¼ tsp active dry yeast (1 packet)
- 1 cup warm milk (about 110°F / 43°C)
- 2 tbsp sugar
- 1 tsp salt
- ¼ cup melted butter or oil
- 1 large egg
For the Filling (savory meat or vegetable):
- 2 tbsp oil or butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 lb (450 g) ground beef, chicken, or turkey (or vegetables like mushrooms, potatoes, or cabbage)
- 1 small carrot, grated (optional)
- 1 bell pepper, chopped (optional)
- 2 tbsp soy sauce or tomato paste
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt (to taste)
- ¼ tsp cumin (optional)
- 2 tbsp chopped parsley or coriander
- ½ cup shredded cheese (optional, for cheesy filling)
For Brushing:
- 1 egg yolk (mixed with 1 tbsp milk)
- Sesame seeds or nigella seeds (optional)
Instructions:
1. Prepare the Dough:
- In a small bowl, mix warm milk, sugar, and yeast. Let sit for 10 minutes until frothy.
- In a large mixing bowl, combine flour and salt.
- Add yeast mixture, egg, and melted butter.
- Mix until dough forms, then knead for 8–10 minutes until soft and elastic.
- Place in a greased bowl, cover with a damp towel, and let rise for 1 hour or until doubled in size.
2. Prepare the Filling:
- Heat oil in a skillet over medium heat.
- Add onions and garlic; sauté until golden.
- Add ground meat and cook until browned.
- Stir in vegetables, soy sauce (or tomato paste), and spices.
- Cook until the mixture is thick and dry — no excess liquid.
- Stir in herbs and cheese (if using). Cool before filling.
3. Shape the Buns:
- Punch down the risen dough and divide into 12 equal pieces.
- Roll each piece into a small circle (about 4 inches wide).
- Place 1–2 tbsp filling in the center.
- Pinch edges together to seal tightly and shape into smooth balls.
- Place seam-side down on a parchment-lined baking tray.
- Cover and let rise again for 30 minutes.
4. Bake:
- Preheat oven to 375°F (190°C).
- Brush buns with egg yolk and sprinkle with sesame or nigella seeds.
- Bake for 18–22 minutes, until golden brown.
- Cool slightly before serving.
Tips:
- For sweet stuffed buns, fill with Nutella, jam, or sweetened cream cheese.
- You can air fry at 350°F (175°C) for about 12–15 minutes.
- Buns freeze well — reheat in the oven before serving.
Serving Suggestion:
Serve warm with a side of ketchup, garlic sauce, or yogurt dip. Perfect for snacks, picnics, or breakfast.
