Ultimate Mozzarella Grilled Cheese Sandwich

Introduction

This mouthwatering mozzarella grilled cheese sandwich is a perfect blend of gooey melted cheese, tangy tomato sauce, and aromatic basil layered between two slices of golden, buttery bread. It’s inspired by Italian flavors — a cross between a Margherita pizza and a classic grilled cheese. Perfect for lunch, dinner, or a cozy snack.

Ingredients

For 2 large sandwiches:

  • 4 slices of thick rustic or sourdough bread
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons olive oil
  • 1 cup shredded or sliced mozzarella cheese (fresh mozzarella for best melt)
  • ½ cup marinara or tomato sauce
  • 1 small tomato, thinly sliced (optional)
  • 6–8 fresh basil leaves
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Prepare the bread:
Spread a thin layer of softened butter on one side of each bread slice. This will be the outer side that crisps beautifully in the pan.
  2. Prepare the filling:
On the unbuttered side of two bread slices, spread a spoonful of marinara or tomato sauce evenly. Sprinkle lightly with garlic powder, salt, and pepper.
  3. Add the cheese and herbs:
Layer mozzarella slices over the sauce, followed by a few fresh basil leaves and a sprinkle of Parmesan cheese. If using tomato slices, add them now. Sprinkle oregano on top for that Italian aroma.
  4. Assemble the sandwiches:
Place the remaining bread slices on top, buttered side facing out.
  5. Grill the sandwiches:
Heat a non-stick skillet or grill pan over medium-low heat. Add a drizzle of olive oil. Place the sandwiches and cook slowly for about 3–4 minutes per side, pressing lightly with a spatula until golden brown and the cheese is fully melted.
  6. Optional broil method:
For that bubbly, browned top like in the picture, transfer the cooked sandwiches to a baking sheet, sprinkle extra mozzarella and Parmesan on top, and broil in the oven for 1–2 minutes until the cheese on top is golden and slightly crispy.
  7. Serve immediately:
Slice in half and serve hot. The cheese should stretch beautifully as you pull the halves apart.

  • Spicy twist: Add red chili flakes or spicy arrabbiata sauce.
  • Crunch upgrade: Brush bread with garlic butter before grilling.
