Ingredients:

Cookie Dough:
– 1½ cups all-purpose flour
– ½ teaspoon baking soda
– ¼ teaspoon salt
– ½ cup unsalted butter, softened
– ½ cup creamy peanut butter
– ½ cup granulated sugar
– ½ cup packed brown sugar
– 1 large egg
– 1 teaspoon vanilla extract

Filling & Topping:
– 12 mini Reese’s Peanut Butter Cups, unwrapped
– ½ cup semi-sweet chocolate chips, melted
– 1 teaspoon coconut oil (optional, for smoother drizzle)

Instructions:

1. Prep:
– Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

2. Dry Mix:
– In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

3. Cream Butter & Sugars:
– In a large mixing bowl, beat the softened butter, creamy peanut butter, granulated sugar, and brown sugar together until fluffy, about 2 minutes. Add the egg and vanilla extract, mixing until well combined.

4. Combine:
– Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.

5. Shape Dough:
– Roll the dough into 1½-inch balls (about 24 total). Flatten each ball slightly and place 12 on the prepared baking sheet. Press a Reese’s Peanut Butter Cup into the center of each, then top with another round of dough, sealing the edges gently.

6. Bake:
– Bake in the preheated oven for 10-12 minutes, or until the edges are golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

7. Drizzle:
– Melt the semi-sweet chocolate chips (with coconut oil, if using) and drizzle over the cooled cookies. Let the chocolate set before serving.
