8 oz mascarpone cheese, softened
4 oz cream cheese, softened
¼ cup powdered sugar
1 tsp vanilla extract
1 cup whipped cream or whipped topping
Topping (Optional):
Unsweetened cocoa powder (for dusting)
Dark chocolate shavings
📝 Directions:
Preheat the Oven and Prepare the Pan:
Preheat oven to 350°F (175°C).
Grease or line an 8×8-inch baking pan with parchment paper.
Make the Brownie Layer:
In a large bowl, whisk together melted butter and sugar until smooth.
Add eggs and vanilla extract, and mix until combined.
Sift in cocoa powder, flour, salt, and baking powder. Stir just until no dry streaks remain.
Pour batter into the prepared pan and smooth the top.
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
Let cool completely.
Prepare the Espresso Syrup:
In a small saucepan, combine brewed espresso and sugar.
Heat over low until sugar dissolves. Remove from heat and stir in coffee liqueur, if using.
Brush or drizzle the syrup over the cooled brownie layer.
Make the Mascarpone Topping:
In a bowl, beat mascarpone, cream cheese, powdered sugar, and vanilla extract until smooth.
Fold in the whipped cream until fluffy and fully combined.
Assemble the Layers:
Spread the mascarpone topping evenly over the espresso-soaked brownie base.
Smooth the top with a spatula.
Chill and Finish:
Refrigerate for at least 2 hours, or until firm.
Dust with cocoa powder before serving and garnish with dark chocolate shavings if desired.
