This elegant yet easy flatbread blends juicy strawberries, creamy ricotta, and fragrant herbs for a fresh summer biteβperfect as an appetizer, lunch, or light dinner!
Ingredients:
1 pre-made flatbread or thin pizza crust
1 cup fresh strawberries, sliced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Β½ cup fresh ricotta cheese
2 tablespoons fresh basil, chopped
1 tablespoon fresh thyme leaves
Salt and black pepper, to taste
Directions:
Preheat the Oven:
Set your oven to 425Β°F (220Β°C). Place the flatbread on a baking sheet or pizza stone.
Prepare the Strawberries:
In a bowl, toss the sliced strawberries with olive oil, balsamic vinegar, honey, a pinch of salt, and freshly ground black pepper. Let them sit for 5 minutes to lightly marinate.
Assemble the Flatbread:
Spread the ricotta cheese evenly over the flatbread, leaving a small border around the edges. Spoon the marinated strawberries evenly across the ricotta, reserving some of the juices.
Add Herbs:
Sprinkle the chopped basil and thyme leaves over the top. These herbs bring a beautiful aroma and fresh contrast to the sweet strawberries.
Bake:
Bake in the preheated oven for 12β15 minutes, or until the flatbread is crisp and the strawberries have softened slightly. The edges should be golden brown.
Serve Warm:
Optionally, drizzle the reserved balsamic marinade over the top just before serving for an extra flavor boost. Slice and enjoy while warm.
