Ingredients
For the base:
- 600 g (about 21 oz) white chocolate, chopped or in chips
- 2 cups rice bubbles (Rice Krispies or puffed rice cereal)
- 1 cup dried mixed fruit (or chopped candied cherries, pineapple, papaya, etc.)
- 1/2 cup chopped nuts (optional – almonds, macadamias, or pistachios)
- 3/4 cup desiccated coconut
- 1/4 cup dried cranberries or raisins (optional)
- 1 tsp vanilla extract
Optional extras for texture:
- 1/2 cup mini marshmallows
- 1/4 cup chopped dried apricots or mango
- 1/4 cup crushed cookies or biscuits
Instructions
Step 1: Prepare the pan
- Line a 9×13 inch (23×33 cm) baking pan with parchment paper.
- Leave some paper overhanging the sides — this will help lift the slice out later.
Step 2: Melt the white chocolate
- Place the chopped white chocolate in a heatproof bowl.
- Melt it gently using one of these methods:
- Microwave: Heat in 30-second intervals, stirring each time, until smooth.
- Double boiler: Place the bowl over simmering water and stir until melted.
Step 3: Mix the dry ingredients
- In a large bowl, combine:
- Rice cereal
- Coconut
- Mixed fruits and nuts
- Marshmallows (if using)
- Stir to distribute everything evenly.
Step 4: Combine
- Pour the melted white chocolate over the dry mixture.
- Add vanilla extract.
- Stir until all ingredients are well coated with chocolate.
Step 5: Set and chill
- Pour the mixture into the lined pan.
- Press it down gently and smooth the top with a spatula.
- Refrigerate for at least 2 hours or until completely firm.
Step 6: Slice and serve
- Lift the set slice out using the parchment paper.
- Cut into bars or squares using a sharp knife.
- Store in an airtight container in the fridge for up to 2 weeks.
Tips & Variations
- Add a festive touch: Mix in red and green glacé cherries for Christmas colors.
- Nut-free version: Skip the nuts and add extra fruit or cereal.
- For a crunchier texture: Add crushed digestive biscuits or cornflakes.
- Make it vegan: Use dairy-free white chocolate and coconut oil.
Serving Ideas
Serve chilled as a dessert bar, or wrap individual pieces in wax paper for gifting. It also pairs beautifully with coffee, hot chocolate, or tea.
