Peanut Butter Cookies
Ingredients
3 cups creamy peanut butter
3 cups granulated sugar
3 cups packed brown sugar
3 cups unsalted butter, softened
6 large eggs
7 1/2 cups all-purpose flour
4 1/2 teaspoons baking soda
3 teaspoons baking powder
1 1/2 teaspoons salt
6 teaspoons vanilla extract
Instructions
Preheat oven to 350°F. Prepare several baking sheets with parchment.
Beat butter, peanut butter, granulated sugar and brown sugar until smooth and fluffy.
Add eggs one at a time then add vanilla and mix well.
In another bowl whisk flour, baking soda, baking powder and salt.
Add dry mixture gradually into wet mixture until a thick dough forms.
Roll or scoop dough into tablespoon or walnut sized balls and place on baking sheets.
Press each dough ball with a fork in a crosshatch pattern.
Bake 10 to 12 minutes or until edges are lightly golden.
Cool on the baking sheet for a few minutes then move cookies to a rack to finish cooling.
