Strawberry Crunch Cheesecake Bars
Ingredients
For the Crust:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
• 16 oz cream cheese, softened
• 1/2 cup granulated sugar
• 1 tsp vanilla extract
• 2 large eggs
• 1 cup sour cream
• 1 cup fresh strawberries, pureed
For the Strawberry Crunch Topping:
• 1 cup strawberry-flavored cereal (such as Fruity Pebbles or Strawberry Crunch)
• 1/4 cup unsalted butter, melted
• 1/4 cup granulated sugar
Instructions
1. Preheat Oven:
1. Preheat your oven to 325°F (163°C). Grease a 9×13-inch baking pan.
2. Prepare the Crust:
2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
2. Press the mixture into the bottom of the prepared baking pan to form an even layer. Bake for about 10 minutes, then remove from the oven and let it cool.
3. Make the Cheesecake Filling:
3. In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.
3. Add the vanilla extract and eggs, mixing until well combined.
