Homemade Apple Slab Pie


Introduction

Ingredients
For the Crust (makes enough for bottom + top layer)
- 4 cups all-purpose flour
- 1 ½ tsp salt
- 1 ½ cups (3 sticks) unsalted butter, cold and cubed
- 1 large egg
- 2/3 cup ice water
- 1 tbsp vinegar or lemon juice (helps keep crust tender)
For the Apple Filling
- 8–10 medium apples (Granny Smith, Honeycrisp, or mix), peeled, cored, sliced
- 1 cup granulated sugar
- ½ cup brown sugar (for caramel-like richness)
- 2 tsp ground cinnamon
- ½ tsp nutmeg
- 2 tbsp lemon juice
- ¼ cup cornstarch or flour (thickener)
- 2 tbsp unsalted butter, cut into small cubes
For the Topping
- 1 egg, beaten (for egg wash)
- 2 tbsp coarse sugar (optional, for sprinkling)
Instructions
Step 1: Make the Crust
- In a large bowl, whisk together flour and salt.
- Cut in the cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Mix the egg, vinegar, and ice water. Gradually add to the flour mixture until dough just comes together.
- Divide into 2 portions, wrap in plastic, and refrigerate for at least 1 hour.
Step 2: Prepare the Filling
- In a large bowl, combine sliced apples, sugars, cinnamon, nutmeg, lemon juice, and cornstarch.
- Toss until apples are evenly coated. Let sit 10 minutes so juices release.
Step 3: Assemble the Pie
- Roll out one dough portion into a rectangle large enough to fit a 10×15-inch baking sheet (jelly roll pan). Place dough in the pan, pressing to fit.
- Spread apple mixture evenly over the crust. Dot with butter cubes.
- Roll out second dough portion and place over apples. Tuck edges under and crimp.
- Cut slits or strips on top for steam to escape. Brush with egg wash and sprinkle with coarse sugar.
Step 4: Bake
- Preheat oven to 375°F (190°C).
- Bake for 45–55 minutes, until crust is golden and filling is bubbling.
- Let cool at least 30 minutes before cutting into squares.
