Ingredients:
2 Β½ cups all-purpose flour
2 Β½ tsp baking powder
Β½ tsp salt
1 cup unsalted butter, softened
1 ΒΎ cups granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup whole milk
Zest of 2 limes
Β½ cup fresh lime juice
1 Β½ cups fresh blackberries
For the Lime Buttercream Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
3 tbsp fresh lime juice
1 tbsp lime zest
1-2 tbsp milk (if needed)
Instructions:
Preheat oven to 350Β°F (175Β°C). Grease and flour three 8-inch round cake pans. β²οΈ 10 minutes
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, cream butter and sugar until light and fluffy, about 4 minutes. β¨
Beat in eggs one at a time, then add vanilla, lime zest, and lime juice.
Alternately add flour mixture and milk, starting and ending with flour. Mix just until combined.
Gently fold in fresh blackberries, careful not to crush them. π€
Divide batter evenly between pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. π°β²οΈ 30 minutes
Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely. βοΈβ²οΈ 1 hour
For the frosting, beat butter until creamy. Gradually add powdered sugar, lime juice, and lime zest. Beat until smooth and fluffy. Add milk if needed for consistency.
Frost between layers, the top, and sides of the cake. Garnish with extra blackberries and lime zest for a fresh finish! ππ€
