Mango Tapioca Pudding πŸ₯­πŸ˜‹
Ingredients:

1/2 cup small tapioca pearls

2 cups water (for boiling)

1 1/2 cups coconut milk

1–2 tbsp sugar (adjust to taste)

1 ripe mango (peeled & diced)

Pinch of salt

Optional: splash of vanilla or condensed milk for richness

Steps:

Boil tapioca pearls in water until translucent (10–15 mins), stirring often.

Drain & rinse pearls under cold water to remove excess starch.

In a pot, heat coconut milk, sugar, and salt until warm (don’t boil).

Add tapioca pearls and simmer gently for 2–3 mins.

Cool slightly, then stir in mango chunks.

Chill or serve warm β€” top with extra mango or mint if desired.
