egg salad sandwich
Ingredients (Makes 2 sandwiches)
4 hard-boiled eggs, peeled
2½ tablespoons mayonnaise
1 teaspoon Dijon mustard (or yellow mustard if you prefer)
1 tablespoon finely chopped celery (for crunch)
1 teaspoon finely chopped red onion or green onion
Salt and black pepper to taste
Optional: A pinch of paprika or cayenne for kick
Optional: Fresh dill or chives for herby flair
Bread of choice: White, whole wheat, sourdough, rye, or croissants
