Creamy Fruit and Nut Delight Bars
Ingredients
2 cups crushed graham crackers
1 cup melted butter
1 cup sweetened condensed milk
1 cup white chocolate chips
1 cup dried cranberries
1 cup chopped dried apricots
1 cup shredded coconut
1 cup chopped pecans or walnuts
1 teaspoon vanilla extract
1 pinch salt
Creamy Layer
8 oz cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream whipped
Instructions
Preheat the oven to 350°F. Line a baking dish with parchment paper. In a large bowl combine crushed graham crackers, melted butter, and salt until the mixture resembles wet sand. Press firmly into the pan to form an even crust. Bake for 10 minutes then let it cool completely.
In a saucepan melt white chocolate chips with the sweetened condensed milk over low heat, stirring until smooth. Remove from heat and stir in dried cranberries, apricots, coconut, nuts, and vanilla. Spread this mixture over the cooled crust and let it set for 20 minutes.
Prepare the creamy layer by beating cream cheese and powdered sugar until smooth. Add vanilla extract. Fold in the whipped heavy cream gently to keep it fluffy. Spread this creamy mixture evenly over the fruit and nut layer.
Chill the dish for at least 4 hours or until fully firm. Once set lift it from the pan using the parchment paper. Slice into bars using a sharp knife.
Store in the refrigerator for up to five days or freeze for longer storage.
