Cowboy Caviar Couscous Salad

Ingredients:
1 cup couscous
1 cup boiling water
1 tablespoon olive oil
1/2 teaspoon salt
1 can (15 oz) black beans, rinsed and drained
1 cup canned or frozen corn (thawed if frozen)
1 cup cherry tomatoes, halved
1 red bell pepper, diced
1/2 red onion, finely chopped
1 avocado, diced (optional but delicious)
1/4 cup fresh cilantro, chopped
Juice of 1 lime
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon cumin
Salt and pepper, to taste

Instructions:
Prepare the Couscous:
In a medium bowl, combine couscous, boiling water, olive oil, and salt. Cover and let sit for 5 minutes. Fluff with a fork and let cool.
Mix the Veggies:
In a large bowl, combine black beans, corn, cherry tomatoes, bell pepper, red onion, and avocado (if using).
Make the Dressing:
In a small bowl, whisk together lime juice, olive oil, red wine vinegar, cumin, salt, and pepper.
Assemble the Salad:
Add the cooled couscous and chopped cilantro to the veggie mixture. Pour the dressing over the salad and toss gently to combine.
Serve:
Enjoy immediately or chill for 30 minutes to let the flavors meld. Perfect as a light meal or a vibrant side dish!
