Cheesy Broccoli Rice Casserole

Ingredients:

  • 3 cups cooked white rice (jasmine or long grain works best)
  • 4 cups fresh broccoli florets (steamed until just tender)
  • 2 tbsp butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup sour cream
  • 1 cup whole milk (or half-and-half for creamier texture)
  • 3 cups shredded sharp cheddar cheese, divided
  • ½ cup grated Parmesan cheese
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional, for a little heat)
  • ½ cup crushed Ritz crackers or breadcrumbs (optional topping)
  • 1 tbsp melted butter (for topping)

Instructions:

Step 1 – Cook the Rice & Broccoli

  1. Prepare the rice according to package directions. Fluff with a fork and set aside.
  2. Steam or lightly boil the broccoli florets until just tender but still bright green. Drain well.

Step 2 – Make the Creamy Base

  1. In a large skillet, melt the butter over medium heat.
  2. Add the diced onion and sauté until soft and translucent (about 3–4 minutes).
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the cream of mushroom soup, sour cream, and milk. Stir until smooth and heated through.
  5. Mix in 2 cups of the shredded cheddar and all of the Parmesan. Stir until melted and creamy.
  6. Season with paprika, salt, pepper, garlic powder, and cayenne.

Step 3 – Assemble the Casserole

  1. In a large bowl, combine the cooked rice, broccoli, and creamy cheese mixture. Mix well until everything is evenly coated.
  2. Spread the mixture evenly into a greased 9×13-inch baking dish.
  3. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  4. If desired, mix the crushed crackers with melted butter and sprinkle over the cheese for a crunchy topping.

Step 4 – Bake

  1. Preheat oven to 350°F (175°C).
  2. Bake uncovered for 30–35 minutes, until the casserole is bubbly and the top is golden brown.

Step 5 – Serve

  • Let the casserole rest for 5–10 minutes before serving so it sets nicely.
