Cheesy Broccoli Rice Casserole


Ingredients:
- 3 cups cooked white rice (jasmine or long grain works best)
- 4 cups fresh broccoli florets (steamed until just tender)
- 2 tbsp butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1 cup sour cream
- 1 cup whole milk (or half-and-half for creamier texture)
- 3 cups shredded sharp cheddar cheese, divided
- ½ cup grated Parmesan cheese
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- ½ tsp garlic powder
- ¼ tsp cayenne pepper (optional, for a little heat)
- ½ cup crushed Ritz crackers or breadcrumbs (optional topping)
- 1 tbsp melted butter (for topping)
Instructions:
Step 1 – Cook the Rice & Broccoli
- Prepare the rice according to package directions. Fluff with a fork and set aside.
- Steam or lightly boil the broccoli florets until just tender but still bright green. Drain well.
Step 2 – Make the Creamy Base
- In a large skillet, melt the butter over medium heat.
- Add the diced onion and sauté until soft and translucent (about 3–4 minutes).
- Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the cream of mushroom soup, sour cream, and milk. Stir until smooth and heated through.
- Mix in 2 cups of the shredded cheddar and all of the Parmesan. Stir until melted and creamy.
- Season with paprika, salt, pepper, garlic powder, and cayenne.
Step 3 – Assemble the Casserole
- In a large bowl, combine the cooked rice, broccoli, and creamy cheese mixture. Mix well until everything is evenly coated.
- Spread the mixture evenly into a greased 9×13-inch baking dish.
- Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
- If desired, mix the crushed crackers with melted butter and sprinkle over the cheese for a crunchy topping.
Step 4 – Bake
- Preheat oven to 350°F (175°C).
- Bake uncovered for 30–35 minutes, until the casserole is bubbly and the top is golden brown.
Step 5 – Serve
- Let the casserole rest for 5–10 minutes before serving so it sets nicely.
