Classic Italian Meatloaf


Ingredients:
For the Meatloaf:
- 2 lbs ground beef (or half beef, half Italian sausage for extra flavor)
- 1 cup Italian-style breadcrumbs
- 1 cup grated Parmesan cheese
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 large eggs, beaten
- ½ cup whole milk
- ¼ cup fresh parsley, chopped
- 2 tsp dried Italian seasoning
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp crushed red pepper flakes (optional, for a little kick)
For the Topping:
- 2 cups marinara sauce (homemade or store-bought)
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil leaves (for garnish, optional)
Instructions:
- Preheat Oven:
Set oven to 375°F (190°C). Lightly grease or line a loaf pan (or baking sheet if you want free-form style). - Mix the Meatloaf Base:
In a large bowl, combine ground beef, breadcrumbs, Parmesan, onion, garlic, eggs, milk, parsley, and seasonings.
- Mix gently with clean hands or a spoon until just combined. (Don’t overmix—this keeps it tender.)
- Shape the Meatloaf:
Form mixture into a loaf shape and place in the prepared pan. - Bake First Round:
Bake uncovered for 45 minutes. - Add Topping:
Remove from oven. Spread 1 cup marinara sauce over the top. Sprinkle evenly with mozzarella and Parmesan. - Final Bake:
Return to oven for another 20–25 minutes, until cheese is bubbly and meatloaf is cooked through (internal temp 160°F / 71°C). - Rest and Serve:
Let meatloaf rest 10 minutes before slicing. Spoon extra marinara sauce over each slice and garnish with fresh basil.
Serving Suggestions:
- Serve with spaghetti, garlic bread, or roasted vegetables.
- Leftovers make excellent meatloaf sandwiches with extra sauce and melted provolone
