Spring Cheesecake Cake with Raspberry, Lemon, and Orange

Ingredients:

For the Cake:
– 2 cups all-purpose flour
– 1 ½ cups granulated sugar
– 1 tablespoon baking powder
– ½ teaspoon salt
– 1 cup unsalted butter, softened
– 4 large eggs
– 1 teaspoon vanilla extract
– 1 cup milk
– Zest of 1 lemon
– Zest of 1 orange

For the Cheesecake Layer:
– 16 oz cream cheese, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 tablespoon lemon juice
– 1 tablespoon orange juice

For the Raspberry Sauce:
– 2 cups fresh raspberries
– 1/4 cup granulated sugar
– 1 tablespoon lemon juice

For the Frosting:
– 1 cup heavy cream
– 1/4 cup powdered sugar
– 1 teaspoon vanilla extract

Instructions:

Step 1: Prepare the Raspberry Sauce
1. In a small saucepan, combine the raspberries, granulated sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, about 5-7 minutes. Remove from heat and let cool.

Step 2: Make the Cheesecake Layer
2. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
3. In a large bowl, beat the softened cream cheese and granulated sugar until smooth. Add the eggs, vanilla extract, lemon juice, and orange juice, mixing until well combined.
4. Pour the cheesecake mixture into the prepared springform pan and bake for 50-60 minutes, or until the center is set. Let cool completely before removing from the pan.

Step 3: Make the Cake
5. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the softened butter, eggs, vanilla extract, milk, lemon zest, and orange zest. Beat until smooth and well combined.
6. Divide the batter evenly between two greased 9-inch round cake pans.
7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Step 4: Assemble the Cake
8. Place one layer of cake on a serving plate. Spread a layer of raspberry sauce over the cake, then place the cheesecake layer on top.
9. Add the second layer of cake on top of the cheesecake.

Step 5: Make the Frosting
10. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
11. Frost the top and sides of the assembled cake with the whipped cream frosting.

Step 6: Serve
12. Drizzle additional raspberry sauce over the top and garnish with fresh raspberries and citrus zest if desired.
