Sweet Potato & Zucchini Ground Beef Skillet
Ingredients (Serves 2–3):
1 lb lean ground beef
2 cups sweet potatoes, peeled & diced
1 medium zucchini, sliced into half-moons
1/2 onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cumin
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Brown the Beef: In a large skillet, cook the ground beef over medium-high heat until browned and crumbly, about 5–7 minutes. Season with salt, pepper, and smoked paprika.
Add Garlic & Onion: Stir in garlic and onion, cooking for 2–3 minutes until soft and fragrant.
Sauté the Sweet Potatoes: Push beef to one side, add olive oil and sweet potatoes. Cook for 10–12 minutes, stirring occasionally, until fork-tender and golden.
Toss in the Zucchini: Mix in the zucchini and cook for 5 more minutes, until slightly tender.
Garnish & Serve: Sprinkle with chopped parsley and serve hot in bowls.
