Honey and Mustard Salmon Skewers

Ingredients (serves 4):

500g skinless salmon fillet, cubed

2 tbsp runny honey

2 tbsp Dijon mustard (or wholegrain mustard)

1 tbsp soy sauce

1 tbsp fresh lemon juice

1 tbsp olive oil

Freshly ground pepper

Skewers

Optional: a few slices of zucchini or bell pepper to alternate between the salmon cubes

Preparation:

Prepare the marinade:
In a bowl, combine the honey, mustard, soy sauce, lemon juice, and olive oil. Season with pepper to taste.

Add the salmon cubes to the marinade and toss gently to coat. Cover and let marinate in a cool place for 30 minutes to 1 hour.

Assemble the skewers: Thread the salmon cubes onto the skewers. You can alternate with vegetables if desired.

Cooking:

Barbecue: 2 to 3 minutes per side.

Frying pan: Over medium-high heat, about 3-4 minutes, turning to brown all sides.

Oven: Preheat to 200°C (400°F), cook for 10 to 12 minutes on a baking sheet lined with parchment paper, keeping a close eye on the skewers.

At the end of cooking, you can brush the skewers with a little of the remaining (warmed) marinade for extra shine.
