Black Pepper Chicken with Mushrooms .
Ingredients:
1 lb boneless, skinless chicken thighs, sliced thin
2 cups cremini mushrooms, sliced
1 tablespoon freshly ground black pepper
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon dark soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
4 cloves garlic, minced
1 teaspoon ginger, grated
2 green onions, chopped
1 teaspoon sesame oil
Salt to taste
Directions:
In a bowl, toss sliced chicken with cornstarch and 1 tablespoon soy sauce. Let marinate for 10 minutes.
Heat 1 tablespoon of oil in a wok or skillet over high heat. Add the chicken and stir-fry for 4–5 minutes until golden and just cooked through. Remove and set aside.
Add the remaining oil, followed by garlic, ginger, and mushrooms. Cook for 3–4 minutes until mushrooms soften.
Return chicken to the pan and add oyster sauce, dark soy sauce, remaining soy sauce, and black pepper. Toss well to coat.
Stir-fry for another 2 minutes until everything is well glazed and hot.
Drizzle sesame oil and add chopped green onions before serving.
