Big Flourless Chocolate Cake Recipe (Gluten-Free)


Ingredients
- 450 g (16 oz / 2 cups) semi-sweet chocolate chips (or chopped chocolate)
- 225 g (1 cup) unsalted butter
- 8 large eggs
- 200 g (1 cup) granulated sugar
- 2 tsp vanilla extract
- ½ tsp salt
- 2 tbsp cocoa powder (for dusting, optional)
- Whipped cream or fresh berries (for serving)
Method
- Preheat oven to 175°C (350°F). Grease a 9×13-inch baking pan and line with parchment paper.
- Melt chocolate + butter together in a heatproof bowl (microwave in 30-second bursts or over a double boiler). Stir until smooth.
- Whisk eggs + sugar + vanilla + salt in a large mixing bowl until pale and slightly thickened.
- Fold in melted chocolate mixture gently until fully combined.
- Pour batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes, until the top has a thin crust and the center is just set (a toothpick should come out with a few moist crumbs).
- Cool completely in the pan before slicing into large squares or bars.
- Dust with cocoa powder and serve with whipped cream or fresh berries.
