Big Flourless Chocolate Cake Recipe (Gluten-Free)

Ingredients

  • 450 g (16 oz / 2 cups) semi-sweet chocolate chips (or chopped chocolate)
  • 225 g (1 cup) unsalted butter
  • 8 large eggs
  • 200 g (1 cup) granulated sugar
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 2 tbsp cocoa powder (for dusting, optional)
  • Whipped cream or fresh berries (for serving)

Method

  1. Preheat oven to 175°C (350°F). Grease a 9×13-inch baking pan and line with parchment paper.
  2. Melt chocolate + butter together in a heatproof bowl (microwave in 30-second bursts or over a double boiler). Stir until smooth.
  3. Whisk eggs + sugar + vanilla + salt in a large mixing bowl until pale and slightly thickened.
  4. Fold in melted chocolate mixture gently until fully combined.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 35–40 minutes, until the top has a thin crust and the center is just set (a toothpick should come out with a few moist crumbs).
  7. Cool completely in the pan before slicing into large squares or bars.
  8. Dust with cocoa powder and serve with whipped cream or fresh berries.
