Strawberry Cheesecake Cookies
Ingredients
200 g all-purpose flour
100 g granulated sugar
100 g softened butter
1 egg
1 tsp vanilla extract
150 g cream cheese (like Philadelphia), softened
100 g strawberry jam (preferably with fruit chunks)
1 tbsp powdered sugar (for cheesecake cream)
A pinch of salt
Instructions
Cookie dough: In a bowl, beat butter with sugar until fluffy. Add egg and vanilla, mix well. Sift flour with salt and gradually fold into the mixture until smooth but soft dough forms.
Cheesecake cream: In a separate bowl, mix cream cheese with powdered sugar until smooth and fluffy.
Assembly: Divide cookie dough into two portions. Mix strawberry jam into one portion, creating a marbled red and pink dough. Leave the other plain.
On parchment paper, form small discs of plain dough alternated or swirled with the strawberry dough. Place a teaspoon of cheesecake cream on one disc, then cover with another disc, sealing edges well.
Place cookies on a baking sheet lined with parchment, spaced apart. Bake at 180°C (350°F) for about 12-15 minutes until edges are lightly golden.
Let cool completely before serving. The cookies will be soft with a creamy cheesecake center and a sweet marbled strawberry swirl.
