Cheesy Ham and Potato Casserole


Ingredients
- 6 medium potatoes, peeled and diced (about 5 cups)
- 2 cups cooked ham, diced
- 1 cup green onions, chopped
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk (whole or 2%)
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika (optional)
- 1/2 cup sour cream (optional but adds creaminess)
Instructions**
- Preheat Oven
- Heat your oven to 375°F (190°C) and lightly grease a large 9×13-inch baking dish.
- Cook the Potatoes
- Peel and dice the potatoes. Boil them in salted water for about 8–10 minutes, until just tender (not mushy). Drain and set aside.
- Make the Creamy Sauce
- In a saucepan, melt the butter over medium heat.
- Whisk in the flour to make a roux; cook for 1 minute.
- Slowly whisk in the milk and heavy cream until smooth.
- Add salt, pepper, garlic powder, onion powder, and paprika.
- Continue stirring until the sauce thickens, about 5–7 minutes.
- Remove from heat and stir in 1 cup shredded cheddar cheese until melted and creamy.
- Add sour cream (if using) and mix.
- Assemble the Casserole
- Spread half of the cooked potatoes in the baking dish.
- Layer half of the ham and green onions on top.
- Pour half of the cheese sauce evenly over the layers.
- Repeat with remaining potatoes, ham, onions, and sauce.
- Sprinkle the top with the rest of the cheddar and mozzarella cheese.
- Bake
- Bake uncovered for 35–45 minutes, or until bubbly and golden brown on top.
- Finish and Serve
- Let it cool for 10 minutes before serving.
- Garnish with a sprinkle of chopped green onions or parsley if desired.
Tips**
- You can use frozen diced hash browns instead of fresh potatoes to save time.
- Add bell peppers or mushrooms for more color and flavor.
- Use leftover holiday ham — this dish is perfect for it!
- If you love it extra cheesy, add a handful of Monterey Jack or Pepper Jack for a little kick.
