Chocolate Peanut Clusters


Ingredients:
2 cups semi-sweet chocolate chips
1 cup milk chocolate chips
2 tablespoons coconut oil or shortening
2 cups roasted peanuts (salted or unsalted)
1 teaspoon vanilla extract
Instructions:
Melt the semi-sweet chocolate chips, milk chocolate chips, and coconut oil in a heatproof bowl set over simmering water or in the microwave in 20-second intervals, stirring until completely smooth.
Stir in the vanilla extract until fully blended into the melted chocolate.
Add the roasted peanuts to the chocolate mixture and fold gently until all the peanuts are evenly coated.
Line a baking sheet with parchment paper and drop spoonfuls of the peanut-chocolate mixture onto the sheet, making clusters of your preferred size.
Tap the baking sheet lightly on the counter to settle the clusters and smooth their shape.
Refrigerate the clusters for about 30 minutes or until set and firm.
Store the finished clusters in an airtight container at room temperature for up to one week or in the refrigerator for longer freshness.
