Peach Hand Pies

These peach hand pies are tender, flaky, and filled with a luscious peach filling that bursts with flavor in every bite. Perfectly glazed, they make a delightful dessert or snack.

Ingredients
For the pastry:
2 ½ cups all-purpose flour
1 cup unsalted butter, cold and cubed
1 teaspoon salt
1 tablespoon granulated sugar
6 tablespoons ice water (add more if needed)

For the peach filling:
2 cups diced peaches (fresh or canned, drained)
½ cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
½ teaspoon cinnamon (optional)

For the glaze:
1 cup powdered sugar
2 tablespoons milk
½ teaspoon vanilla extract

Method
In a large bowl, mix flour, salt, and sugar. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough begins to come together. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.

Meanwhile, prepare the filling. In a small saucepan, combine diced peaches, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring often, until the mixture thickens and becomes glossy. Remove from heat and let cool completely.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut circles using a large cookie cutter or a small bowl. Place a spoonful of peach filling in the center of each circle. Fold over to create a half-moon shape and press the edges with a fork to seal.

Arrange the pies on the baking sheet. Bake for 20 to 25 minutes or until golden brown. Remove and let cool on a wire rack.

For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Brush the glaze over the cooled pies and allow it to set before serving.
