Korean Crispy Honey Garlic Chicken Bites


Ingredients
For the Chicken:
- 2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup all-purpose flour
- 1 cup cornstarch
- 2 large eggs, beaten
- Vegetable oil, for frying
For the Sauce:
- 4 tablespoons soy sauce
- 3 tablespoons honey
- 2 tablespoons brown sugar
- 3 tablespoons ketchup
- 2 tablespoons rice vinegar (or apple cider vinegar)
- 4 cloves garlic, finely minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon sesame oil
- ½ teaspoon red chili flakes (optional, for spice)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken)

Instructions
- Prepare the Chicken:
- In a large bowl, season chicken pieces with salt, black pepper, garlic powder, and paprika. Mix well and set aside for 10 minutes.
- Coat the Chicken:
- In one bowl, add the flour and cornstarch.
- In another, beat the eggs.
- Dip each chicken piece in the flour mixture, then into the eggs, then back into the flour again for an extra-crispy coating.
- Deep Fry the Chicken:
- Heat vegetable oil in a large pot or deep pan over medium-high heat (around 350°F / 175°C).
- Fry the chicken in batches, about 4–5 minutes each, until golden and crispy.
- Remove and place on paper towels.
- For ultimate crunch, double fry them: let rest for 5 minutes, then fry again for 2 minutes until deep golden.
- Make the Sauce:
- In a small saucepan, combine soy sauce, honey, brown sugar, ketchup, vinegar, garlic, ginger, sesame oil, and chili flakes.
- Bring to a simmer over medium heat for 3–4 minutes.
- Add the cornstarch slurry and stir until the sauce thickens and becomes glossy.
- Coat the Chicken:
- Add the fried chicken pieces into a large bowl.
- Pour the hot sauce over and toss until every piece is coated and sticky.
- Serve:
- Sprinkle with sesame seeds and chopped green onions or parsley.
- Serve hot with steamed rice or fries.
