Cheesy Ham and Potato Casserole

Ingredients

  • 6 medium potatoes, peeled and diced (about 5 cups)
  • 2 cups cooked ham, diced
  • 1 cup green onions, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika (optional)
  • 1/2 cup sour cream (optional but adds creaminess)

Instructions**

  1. Preheat Oven
  • Heat your oven to 375°F (190°C) and lightly grease a large 9×13-inch baking dish.
  1. Cook the Potatoes
  • Peel and dice the potatoes. Boil them in salted water for about 8–10 minutes, until just tender (not mushy). Drain and set aside.
  1. Make the Creamy Sauce
  • In a saucepan, melt the butter over medium heat.
  • Whisk in the flour to make a roux; cook for 1 minute.
  • Slowly whisk in the milk and heavy cream until smooth.
  • Add salt, pepper, garlic powder, onion powder, and paprika.
  • Continue stirring until the sauce thickens, about 5–7 minutes.
  • Remove from heat and stir in 1 cup shredded cheddar cheese until melted and creamy.
  • Add sour cream (if using) and mix.
  1. Assemble the Casserole
  • Spread half of the cooked potatoes in the baking dish.
  • Layer half of the ham and green onions on top.
  • Pour half of the cheese sauce evenly over the layers.
  • Repeat with remaining potatoes, ham, onions, and sauce.
  • Sprinkle the top with the rest of the cheddar and mozzarella cheese.
  1. Bake
  • Bake uncovered for 35–45 minutes, or until bubbly and golden brown on top.
  1. Finish and Serve
  • Let it cool for 10 minutes before serving.
  • Garnish with a sprinkle of chopped green onions or parsley if desired.

Tips**

  • You can use frozen diced hash browns instead of fresh potatoes to save time.
  • Add bell peppers or mushrooms for more color and flavor.
  • Use leftover holiday ham — this dish is perfect for it!
  • If you love it extra cheesy, add a handful of Monterey Jack or Pepper Jack for a little kick.
