Instructions
Step 1: Prepare the Potatoes
- Peel and cut potatoes into chunks.
- Boil in salted water until fork-tender (about 20 minutes).
- Drain well and mash until smooth (or use a potato ricer for extra fluffiness).
Step 2: Mix the Base
- Stir in softened butter and warm milk/cream until creamy.
- Add egg yolks one by one, mixing well after each.
- Fold in grated cheese, nutmeg, salt, and pepper.
Step 3: Whip the Egg Whites
