Cheesy Beef Stuffed Biscuits

Ingredients
For the Beef Filling
- 2 lbs beef chuck roast (or brisket/short ribs)
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth

- 1 tbsp soy sauce (optional, for depth)
- 1 tsp smoked paprika
- 1 tsp thyme (dried or fresh sprigs)
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp olive oil
For the Biscuits
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- ½ cup cold unsalted butter (cubed)
- 1 cup cold buttermilk (or milk + 1 tbsp lemon juice)
(You can also use canned refrigerated biscuits for a shortcut.)
For Assembly
- 2 cups shredded mozzarella or provolone cheese
- ½ cup Parmesan cheese, grated
- 2 tbsp fresh parsley or chives, chopped
- 2 tbsp melted butter (for brushing)
Instructions
Step 1 – Cook the Beef
- Heat olive oil in a Dutch oven or slow cooker-safe pan.
- Sear beef chuck roast on all sides until browned.
- Add onions, garlic, beef broth, Worcestershire, soy sauce, paprika, thyme, salt, and pepper.
- Cover and cook:
- Slow Cooker: 6–8 hours on low or 4–5 hours on high.
- Oven/Dutch Oven: 3–4 hours at 300°F (150°C).
- Shred beef with two forks once tender. Keep warm with a bit of the cooking liquid.
Step 2 – Make the Biscuits (skip if using canned)
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk flour, baking powder, baking soda, and salt.
- Cut in cold butter until mixture looks crumbly.
- Stir in buttermilk until dough just comes together.
- Roll out to 1-inch thick and cut biscuits with a cutter or glass.
Step 3 – Assemble
- Place half the biscuits on a parchment-lined baking sheet.
- Top each with a spoonful of shredded beef and a sprinkle of mozzarella.
- Cover with another biscuit, pressing edges lightly.
- Brush tops with melted butter.
- Sprinkle Parmesan and fresh herbs on top.
Step 4 – Bake
- Bake at 400°F (200°C) for 15–20 minutes until biscuits are golden and cheese is bubbly.
