Ingredients:
- 3 cups all-purpose flour
- 2 ½ cups granulated sugar
- 1 cup unsalted butter (softened, at room temperature)
- ½ cup vegetable oil
- 6 large eggs (room temperature)
- 1 cup whole milk (room temperature)
- ⅓ cup fresh lemon juice
- 2 tablespoons lemon zest
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons pure vanilla extract
For the Lemon Glaze:
- 1 ½ cups powdered sugar
- 3–4 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions:
- Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour a large bundt pan or 2 loaf pans. - Cream Butter & Sugar
In a large bowl, beat the butter, oil, and sugar together until light and fluffy (about 4–5 minutes). - Add Eggs
Add the eggs one at a time, beating well after each addition. - Mix Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. - Combine Wet & Dry
Gradually add the dry ingredients to the butter mixture, alternating with the milk.
Start and end with flour mixture. Mix gently, don’t overbeat. - Add Lemon Flavor
Stir in lemon juice, lemon zest, and vanilla extract until smooth. - Bake
Pour batter into prepared pan(s). Bake for 55–65 minutes (bundt) or 45–50 minutes (loaf pans) until a toothpick comes out clean. - Cool & Glaze
