Classic Italian Meatloaf

Ingredients:

For the Meatloaf:

  • 2 lbs ground beef (or half beef, half Italian sausage for extra flavor)
  • 1 cup Italian-style breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 large eggs, beaten
  • ½ cup whole milk
  • ¼ cup fresh parsley, chopped
  • 2 tsp dried Italian seasoning
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp crushed red pepper flakes (optional, for a little kick)

For the Topping:

  • 2 cups marinara sauce (homemade or store-bought)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves (for garnish, optional)

Instructions:

  1. Preheat Oven:
    Set oven to 375°F (190°C). Lightly grease or line a loaf pan (or baking sheet if you want free-form style).
  2. Mix the Meatloaf Base:
    In a large bowl, combine ground beef, breadcrumbs, Parmesan, onion, garlic, eggs, milk, parsley, and seasonings.
  • Mix gently with clean hands or a spoon until just combined. (Don’t overmix—this keeps it tender.)
  1. Shape the Meatloaf:
    Form mixture into a loaf shape and place in the prepared pan.
  2. Bake First Round:
    Bake uncovered for 45 minutes.
  3. Add Topping:
    Remove from oven. Spread 1 cup marinara sauce over the top. Sprinkle evenly with mozzarella and Parmesan.
  4. Final Bake:
    Return to oven for another 20–25 minutes, until cheese is bubbly and meatloaf is cooked through (internal temp 160°F / 71°C).
  5. Rest and Serve:
    Let meatloaf rest 10 minutes before slicing. Spoon extra marinara sauce over each slice and garnish with fresh basil.

Serving Suggestions:

  • Serve with spaghetti, garlic bread, or roasted vegetables.
  • Leftovers make excellent meatloaf sandwiches with extra sauce and melted provolone
