Banana Pudding Pound Cake πβ¨
Ingredients:
For the Cake:
3 cups all-purpose flour, sifted then measured
1 (5.1 oz) box banana cream instant pudding mix (do not prepare the pudding)
Β½ teaspoon salt
ΒΌ teaspoon baking powder
ΒΌ teaspoon baking soda
1 cup unsalted butter, softened
2 Β½ cups granulated sugar
5 large eggs
1 cup mashed ripe bananas (about 2 medium bananas)
1 tablespoon vanilla extract
1 cup buttermilk
For the Glaze (Optional):
1 cup powdered sugar
2 tablespoons milk or heavy cream
Β½ teaspoon vanilla extract
Instructions:
1. Preheat oven to 325Β°F (163Β°C). Grease and flour a bundt pan.
2. In a bowl, whisk together flour, banana pudding mix, salt, baking powder, and baking soda. Set aside.
3. In a large mixing bowl, beat the butter and sugar until light and fluffy.
4. Add eggs, one at a time, mixing well after each addition.
5. Mix in mashed bananas and vanilla extract until combined.
6. Alternately add the dry ingredients and buttermilk, starting and ending with the dry ingredients. Mix until just combined.
7. Pour batter into the prepared bundt pan and smooth the top.
8. Bake for 70-80 minutes or until a toothpick inserted comes out clean.
9. Let cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
10. For the glaze, whisk together powdered sugar, milk, and vanilla. Drizzle over the cooled cake.
