Peaches and Cream Cheesecake Bars
Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
For the cheesecake filling:
16 oz cream cheese, softened
1/2 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
1/4 cup heavy cream
For the peach topping:
2 cups fresh peaches, peeled and diced (or use canned peaches, drained)
1/4 cup sugar
1 tbsp lemon juice
Instructions:
Preheat the oven to 325°F (163°C). Grease an 8×8-inch baking pan and line with parchment paper.
For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom of the prepared pan. Bake for 8-10 minutes, then let cool.
For the cheesecake filling, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla, sour cream, and heavy cream until fully combined.
