Grilled Surf and Turf Skewers with Chimichurri
Ingredients :
1⁄2 lb steak, cut into cubes
Large 1⁄2 lb shrimp, peeled and deveined
1 tablespoon of olive oil
Salt and pepper to taste
Skewers (so dipped in wood)
Sauce chimichurri :
1⁄2 cup chopped parsley
2 tablespoons of red vinegar
2 minced garlic cloves
1⁄4 cup olive oil
1⁄2 teaspoon red pepper flakes
Salt and pepper to taste
Preparation:
Toss the steak and shrimp with olive oil, salt and pepper. Wire on skewers, alternating meat and shrimp.
Grill skewers over medium-high heat for 2-3 minutes per side, until steak is tender and shrimp are pink.
Mix all the chimichurri ingredients in a bowl.
Serve chimichurri skewers or on the side for dipping.
