Pizza is one of the most beloved dishes when it comes to crowd pleasing and filling dinners for the whole family. But sometimes you need something with an even heartier finish and easier prep for a simple meal.
This bubble up casserole is an incredible option when you’re craving pizza and want something hot, melty, and customizable.
Like my Chicken and Biscuit Pot Pie Skillet, it utilizes biscuit dough to create a fluffy and delicious layer that you can top with your choice of cheese, sauce, and favorite pizza toppings. This easy dinner recipe will save you money on ordering delivery and it’s sure to please any crowd, just like this Big Mac Casserole!
Biscuit Dough: Using store-bought biscuit dough is an easy way to create a tasty and fluffy bottom layer that acts as the crust for this pizza casserole. You could also use homemade instead of canned biscuits.
Pizza Sauce: Choose your favorite pizza sauce from your local grocery store, or use a homemade sauce if you have a go-to recipe.
Shredded Mozzarella Cheese: Any kind of shredded cheese works well, but mozzarella is a classic pizza option thanks to how easily it melts.
Italian Sausage: For some protein and salty, savory flavor. Sweet or spicy sausage both work.
Pepperoni: Compliments the sausage and channels a classic pizza flavor.
Black Olives: Feel free to omit if you’re not a fan.
Green Peppers: Add a bit of color variation and a nice peppery bite.
Grated Parmesan Cheese: You can never have too much cheese! Freshly grated Parmesan will provide the best results, but store-bought is also fine.
Step 1: Heat a medium skillet over medium-high heat and add the sausage.
Step 2: Break into pieces with a spoon and cook until fully browned, about 9 to 10 minutes.
Step 3: Pop open the can of biscuits and cut each biscuit into four small pieces.
Step 4: Add the biscuit pieces to the bottom of a prepared baking dish sprayed with non-stick cooking spray.
Step 5: Bake the biscuit layer for 10 minutes at 400 degrees, then remove from the oven.
Step 6: Spread the pizza sauce over top of the biscuits.
Step 7: Add 2 cups of cheese, then finish with a layer of sausage, pepperoni, olives, green peppers, and the last 1/2 cup of cheese.
Step 8: Return to the oven at 400 degrees and bake for 15 to 20 minutes or until hot and bubbly and golden brown on top.
Recipe Tips
If you’re using Grands biscuits, you’ll need about 12 to fully cover the bottom of your baking dish.
You can also use this recipe to make mini pizza cups. Instead of a casserole dish, arrange the biscuit pieces in a muffin tin or a cupcake tin and assemble individual pizza muffins. This is great if you have lots of people with different topping preferences.
Feel free to replace the sausage with ground beef, ground turkey, ground pork, or ground chicken. You can also omit it altogether to make this dish vegetarian.
For other topping ideas, add mushrooms, onions, bacon, ham, spinach, broccoli, artichoke, or jalapeno peppers.
Use a blend of different kind of shredded cheeses like colby jack, pepper jack, Monterey jack, or American cheese for some flavor variety.

Ingredients

2- 7.5 ounce cans Refrigerated biscuits see notes
1- 15 ounce jar pizza sauce
2 1/2 cups mozarella cheese shredded
1/2 pound Italian sausage
5 ounce package of pepperoni you’ll need about 25 slices
1 cup sliced black olives
1/2 cup diced green peppers
1/4 cup grated parmesan cheese
Instructions

Preheat the oven to 400 degrees
Spray a 9×13 baking dish with non stick cooking spray.
Heat a medium skillet on medium-high heat and add the sausage, cook 10 minutes breaking it up with a wooden spoon. Remove to a paper towel to drain.
Cut each biscuit into fourths and place into the bottom of the baking dish. Bake 10-12 minutes.
Remove the dish from the oven and spread the pizza sauce over the top of the biscuits.
Sprinkle 2 cups of the cheese on top followed by the sausage, pepperoni, olives, green peppers and sprinkle the remaining 1/2 cup of cheese on top.
Bake 15-20 minutes or until hot and bubbly.
Sprinkle grated parmesan cheese on top and serve!

Notes
If you can only find Grands you will only need 12 grands biscuits as they are larger. You can also use the frozen Grands biscuits in the bag, just thaw them first.
Try making individual pizzas by putting them into muffins tins.
