Peanut Butter Cookie Bars
Ingredients:
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips (optional)
Directions:
Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
In a large mixing bowl, combine the peanut butter, softened butter, granulated sugar, and brown sugar. Beat with an electric mixer on medium speed until creamy and well combined.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
If using chocolate chips, fold them into the batter until evenly distributed.
Spread the dough evenly in the prepared baking dish, smoothing the top with a spatula.
Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
Let the cookie bars cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely before cutting into squares.
