Cheesy Beef Steak and Veggie Stuffed Baked Potato 🥔🍖🧀
A savory, cheesy, and hearty dish featuring tender steak, sautéed veggies, and melted cheese, all served over a fluffy baked potato.

Ingredients:
For the Baked Potatoes:

4 large russet potatoes

Olive oil

Salt and pepper

For the Beef Steak:

1 lb flank steak or sirloin, thinly sliced

1 tbsp olive oil

1 tbsp soy sauce

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

For the Veggies:

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 medium onion, thinly sliced

2 cloves garlic, minced

1 tbsp olive oil

Salt and pepper, to taste

For the Cheese Sauce:

1 cup shredded cheddar cheese

1/2 cup heavy cream

1 tbsp butter

Salt and pepper to taste

Instructions:
1. Prepare the Baked Potatoes:

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean, pierce them several times with a fork, and rub them with olive oil, salt, and pepper.

Bake the potatoes for about 45-60 minutes, or until tender when pierced with a fork.

2. Cook the Beef Steak:

Heat a skillet over medium-high heat. Add olive oil and allow it to heat.

Season the beef steak slices with soy sauce, garlic powder, onion powder, salt, and pepper.

Add the steak to the skillet and cook for 4-5 minutes, flipping halfway through, until browned and cooked to your preferred level of doneness. Set the steak aside.

3. Sauté the Veggies:

In the same skillet, add the sliced red and green bell peppers, onion, and garlic. Sauté over medium heat for about 5-7 minutes, until softened and slightly caramelized. Season with salt and pepper to taste. Set aside.

4. Make the Cheese Sauce:

In a small saucepan, melt the butter over medium heat.

Add the heavy cream and bring to a simmer. Stir occasionally to prevent burning.

Add the shredded cheddar cheese and stir until melted and smooth. Season with salt and pepper to taste.

5. Assemble the Dish:

Once the potatoes are cooked, slice them open and fluff the insides with a fork.

Top each potato with the sautéed steak, veggies, and then pour over the cheesy sauce.

Optionally, you can sprinkle additional cheese on top and place the loaded potato under the broiler for a few minutes to melt the cheese.
